Gelatin free recipe for gummy candies such as gummie bears

INGREDIENTS

2 cups fruit juice (frozen concentrate using half the water works really well)
1 tbsp agar-agar powder
1 tsp xanthan gum

DIRECTIONS

Mix all the ingredients and bring to a boil over medium heat, the agar and xanthan should be dissolved at this point. Pour the mix into cornstarch dusted molds or use a cake pan lined with parchment paper and then cornstarch dusted. Let cool in the molds overnight before unmolding and if using a cake pan cut into strips of desired size.

Keep in mind that with different juices you may end up with gels that are too soft (just remelt and add more agar) or too hard (remelt and add more liquid). You’ll need to adjust the recipe for exactly how you want them to come out. It also helps to make real cornstarch gel molds by using a few boxes of starch in a large cakepan to make a starch layer around 1 inch thick and then pressing the shape you want into the starch, that’s the method I use when I do this.
